VSG: Brain (Dopamine)

Brain Boosting Pancakes

 

SERVES: 2 PREP TIME: 15 MIN Gluten Free | Soy Free

Ingredients:

Pancakes:
• 1 ½ cups gluten free oat flour
• ½ cup chickpea flour
• ¼ cup cocoa powder
• 1 tablespoon baking powder
• 1 teaspoon vegan sugar (optional)
• ¼ teaspoon salt
• 1 ½ cups coconut milk beverage, or your favorite vegan milk
• 4 teaspoons high oleic sunflower oil

Toppings:
• ¼ cup bananas, sliced
• ½ cup strawberries, sliced
• ¼ cup raw walnut pieces
• ¼ cup maple syrup or to taste

Directions:

1. Combine all dry ingredients in a large mixing bowl and mix together thoroughly. Sift if necessary.

2. Set a lightly oiled pan to medium heat.

3. Combine all wet ingredients with the flour and mix thoroughly.

4. Ladle about a 1/3 cup of batter into pan. Spread evenly over the pan, and cook for about 2 minutes or until pancakes are puffed, dry around the edges, and bubbled. Flip carefully and cook other side for about 2 more minutes.

5. Top with sliced bananas, strawberries, walnuts, and serve with a side of maple syrup.

Tip: If the batter becomes too thick, add more vegan milk ½ teaspoon at a time to achieve desired texture.

Tip: You can use any vegan milk, but try coconut milk beverage to create the best texture.
